Mikael Jönsson at Hedone recently turned 50, and unless you want to seriously question what you've achieved in life, don't ask him what his highlights have been. It's still only a few years ago that Mikael taught himself how to cook and started a modest restaurant in Chiswick. At first he fucked pretty much every chef in London off by saying he would open the first produce focused restaurant in London. But then people slowly began to realise that he was right. No one understands a pigeon, a turbot or a cow better than Mikael. And he only serves said animals (and of course others) with the uttermost respect, and complimentary ingredients that elevates and brings out their primary and secondary flavors.
