When it opened in the early 1960s a mere 100 feet from Rome’s best preserved ancient building, Armando al Pantheon was a rustic tavern serving a hungry working class. Over the past five decades of family ownership, this trattoria has evolved into a point of reference for Roman cuisine that attracts well heeled locals and visitors alike. Guests fill the trattoria’s 35 seats to dine on straight-forward classics like ajo, ojo, e peperoncino (pasta with garlic and oil and a touch of chili), coda alla vaccinara (oxtail stew), and carciofi alla romana (tender simmered artichokes), all served by the Gargioli family, a clan tirelessly dedicated to the flavors and traditions of their city.
