Shinya Kudo earned his chops at sushi restaurants like Michelin-starred Harutaka and brings the precision of a sushi shokinin (artisan) to fish fillets that have been marinated between blades of kombu, breaded, fried, and then slathered in tofu mayo. But his masterpiece is the anago hot dog — a crisp piece of conger eel tempura garnished with egg and cucumber, sandwiched in a fluffy bun.
